Hello,
each time i plug my laptop to the controller, the sound comes out from the laptop speakers. I have to close VDJ and reopen it, and then the sounds comes out from the controllers output.
How to set it up so that the sound comes out from the controller straight away ?

VirtualDJ doesnt force any Audio setup when a controller is connected.
But if you get the "New Device Device detected" window https://www.virtualdj.com/manuals/hardware/pioneer/ddjrev5/setup.html then you can easily select it (or from the AUDIO tab of Settings)

So you mean that each time i connect my controller, i have to select the controller as a new device, and restart VDJ ? Because that's why i have to do. I ticked the "don't show again" checkbox so that the windows does not pop up everytime i connect my controller, but it does not prevent to have to restart VDJ

Then start VirtualDJ AFTER you have connected your controller to your PC

It should work regardless of if he connected the controller before or after VirtualDJ is started - it works that way when I do it.
If you ticked "Don't Show again" or whatever the option is, then whatever you made an audio output selection choice will be applied in future for that controller/soundcard without asking. I think in there is a dontShowAgain setting oprion (just search for that under Settings > Options) that stores these permanent choices - you might want to clear that setting to regain the option to choice.
Summary = don't select "don't show again" unless you are sure that's how you want it to be going forward.

Just to make it clear:
1) When VirtualDJ starts, it tries to use the last sound interface used with the program the previous time you run it.
2) If that sound interface is missing, VirtualDJ will use the PC/MAC default sound interface
3) While it's using the default sound interface (because the last used one was missing), if the missing interface gets connected back to the system then VirtualDJ should automatically switch the sound interface it uses. However keep in mind that this requires a "clean" connection message from the OS (device connected)
If the device gets connected but VirtualDJ doesn't switch the sound, then you may have to hit "Apply" manually on VirtualDJ's sound setup tab.

Pay attention to point 3) from @PhantomDeejay's post.
This can only really happen if you connected that controller with soundcard/soundcard on startup, chose it as the audio destination, then disconnected/reconnected the controller with soundcard/soundcard - it's probably good to go check the Audio configuration to see where the sound is setup to go and hit Apply to ensure sound is going there.
If it is an initial connection and, you don't disconnect during the session, this shouldn't happen (at least I've never seen it happen in that case).

My main issue is not having to select the controlers output when the pop up shows, that's annoying but that's just a click. My main issue is having to restart VDJ. I mean i usually connect my controller first. If i'm requested to select the controller as output, i select it, I pick a song and i hit play and the sound ALWAYS comes out from the laptop speakers. I have to close/restart VDJ, and then i hear the sound from the big speakers (controller output).
I usually prepare my set earlier before connecting the controller, so if VDJ use the last sound interface used, why am i never requested to select the laptop speakers when i use VDJ with no controller connected ?

So, in order to understand:
You use DDJ-REV5 on MAC OS.
When the detection window appears on screen, you click on DDJ-REV5 button and then the Ok button (so, these are 2 clicks)
And then the sound doesn't come from REV5 but from your MAC ?
And you have to restart VirtualDJ ?
Right ?
