I would like for the upfaders and master gain to stay at 50% all the time. I always have to set that right when I open VDJ. I wish it would remember the settings when it closes and keep it there

It's done so that when you open the software it will work, rather than you leaving a level down and struggling to remember why you can't get sound.
If you are using a MIDI mixer that supports it, VDJ will set to the hardware settings when it opens.
You could also configure the levels automatically via ONINIT in mapper, or init in skin.
