Is it possible to enable the manual adjustment of automix start and end points (hover until green, click and drag) as in previous version, rather than having to use the mess and complexity that is the POI editor? This is a massive step backwards as far as I can see, I'm already looking around at other products in case this oversight isn't addressed.

This functionality is not currently available.
The automix editor actually gives you more control and allows you to plan further ahead than doing it one at a time.
If you prefer the v7 method then you can of course continue to use v7 Home Free.
