I'm looking into getting one tabletop for now but for two in the future, my other controller went out and need a quick fix temporary. If I have one tabletop connected, will you be able to swap decks on it like I had a Numark ICDX where when I pressed eject, it would switch from deck 1 to deck 2 and vice versa. Does this feature still exist with the new decks or are they only assigned to one channel???

You will be fine.
As with the most single-deck controllers, there is an action assigned to cycle through the available decks.
On the CDJ7000, you will need to hold the EJECT button for 2 seconds
