Could they be extracted if a user fancied getting really exotic?

You know that if you modify a built in mapping, it creates a copy of it that you can access?

Mapper files yes I know, definition files is what I'm after, the thing that gives each button it's name, deck assignment, range, all that under the hood stuff.

All the definitions are in the controllers.dat file

Definition files of officially supported devices are part of the program's code. They may be on a separate file as said above, but they are still protected by the EULA. No, they cannot be shared.
However, you are free to implement your own definition file for any device you want (even the officially supported ones)
