Your are correct. S-Video or Composite video output does not work with the apple video adapter in bootcamp. That doesn't mean you can't use bootcamp to dj video since you can use the DVI output to get a second monitor to work in bootcamp. The solution to your problem is to buy a scan converter which converts DVI/SVGA into a composite or S-Video signal.
As for the intel extremem graphics chipset it is not not adequate for video use so you will have to buy the mac book pro with the ATI graphics chipset.
