My question is
can I use the Pioneer DDJSR with Virtual DJ8 and have the ability to manipulate and control the volume knobs and cross fader inside of the software so that I can record my mixes internally inside the software?
I had to return a Numark Mixdeck because it would not allow me to control those features.
I don't want to purchase an external CD recorder to record my mixes.

Yes.
Some of the mixes on my Mixcloud page are made with VDJ8, a DDJ-SR and and "internal" recording as you call it (simply by clicking the record button)
