I can't figure out how/where to change the font color on video the video overlay?!
I believe I did this once before but cannot figure out how to do it again.
I believe it's an .xml file somewhere, but even in the only .xml file I can find that appears to pertain to the the "skin" (the only one I can find), even in the "video" section where I can see color definitions, changing them doesn't seem to work nor can I figure out which "definition" is set to "active" or however it is defined. Please help. This is super f'n annoying and tedious that it's not built into the "video options"

picture, where, what are you talking about?
there's text plugin, there's video skins neither are really suitable as video options

That looks like a video skin. In that case you change it directly in the skin xml
