I was wondering if VDJ Mac will broadcast to external servers, such as a Windows Media server ... http://egihosting.com/stream_hosting.aspx (The windows media 9 one) or does it only work with VDJ Radio?

its exactly the same as the windows version
it can stream in shoutcast .mp3 or in icecast .ogg
