Is it possible to remove the beat grid form the default skin?
It's often not accurate and tapping the "Tap" button doesn't work as well as I would like on older songs.

totally possible check out GridAdjust if you use pads it's all there for you, if you don't use pads, start doing so.
Oh sorry, remove, erm an odd request, quite a lot of fx need a grid to work.

Removing CBG completely is not possible.
Removing CBG from being visible on skin is absolutely possible, but you'll have to edit the skin files in order to remove it since there's not such an option built in
