The problem occurs when trying to map the COLOR rotary encoder on each channel of the mixer. I want these rotary encoders to control my stems: rotate to the left for instrumentals, rotate to the right for acappellas.
I use the action script: stem 'FullVocal' to make that happen, and it works great... but they control adjacent channels. For example, it's the COLOR rotary encoder from channel 2 that affects the audio from channel 1 (check the photo). How can I get each COLOR rotary encoder to only control the audio from the same channel, and not the adjacent channel?

You probably dont have to change the mapping at all, rather just click the arrow near the filter knob in skin, and change to "vocal" (if there are pure midi knobs, and do not apply hardware fx)

On VirtualDJ change the mixerOrder setting to '1234' since that's the layout you're trying to use
