What software do I start with... better yet where should I end up... I'm not sure what I want to do. I would like to (maybe someday) make artist mixes like what Chris Cox did with the Britney Spears Mega Mix. I use to DJ with vinyl until mid '90s, with a collection of some top of the line stuff; Technic 1200's, Numark mixer, Peavey CS800's, EV speakers, etc... I really just want to start getting control of the almost 7000 songs and videos I have on iTunes and then maybe doing some djing with my kids (birthday partys, schools, etc...) latter. I just need someplace to start... any suggestions would be greatly appreciated.

Almost all the major DJ softwares allow you to download a demo..
take your time and try out as many demo's as you can, you should always go with what makes YOU feel the most comfortable.

Hi MJ: I think I can read your feeling when you ask your question, as I had the same question about a year..
I've tried many DJ software including our host VDJ and the famous TRAKTOR and both gives you the same feeling you used to have with traditional vinyl, however for me I feel more home with VDJ, you going to love man. TRAKTOR meant to make more complicated mixes so I prefer to stay simple and have everything I need with VDJ.
For hardware - with considering your plan & budget - If not like my case, I've made some search and found a DJ Console controls the software is the best option: I've found that Hercules RMX & NUMARK OMNI Controller both from the same category and same price, and the best thing that both come with built-in audio card so you don't have to buy an external sound card later. Both are excellent All-In-One for such the events you mentioned. If you still DJing as a profession then go for a big set of gear.
Of course you will find more attractive options; all depends on your own preference. I made my mind to RMX controlling VDJ.
I’m telling you my choice as I have history similar to your, last time I touched a mixer was 1990, I did only vinyl and the standard cassette tape and I never did CDs (put your eye-borrow down please), when I had the DJing symptoms back I made some research and came to this result.
