As in if I extract them on a windows PC will I be able to use the same files? There aren't that many available for Mac!

Unfortunately not.
Plugins for Mac have to be re-written. You cant use Windows effects.

VMWare is a VM, so expect poor performance on your Win7...

Poor is an understatement - it's really not designed for realtime audio purposes.
Bootcamp would be the better option for you.

I can second that, I run my macbook bootcamped its the only way to run the windows version properly as it runs as a pc not emulated in any way.
