How do you slide/fade the audio mixer and video at the same time so when you switch manually they both switch to the other deck together? (I'm using the home demo version to try and figure out the software before I buy it.)

I strongly suggest you go through the manuals that you were provided links to ... and are installed to your system in the Documents\VirtualDJ folder.
The questions you have been asking are explained when you read through what options are available. For example, your question above is explained in 2 areas of the VirtualDJ Guide when you look at the pages covering the Config->Video tab options and the dedicated Video section. The options you are looking for is 'Link video crossfader to audio crossfader' and the skin option 'LINK'.
