Peak is the longest time VirtualDJ took to fill an audio buffer in the last second or so.
If your buffer size is 10ms, then 100% means it took 10ms to fill that buffer.
Normally you don't want this to go over 100%, as that will usually result in an audio drop-out or glitch.
Depending on the exact sound card and driver used it is possible that it goes over 100% a short time if there are other buffers down the line without a drop-out, but it should still be considered borderline.
Best in this case is to try to increase the buffer size or latency.
