Does anyone know how to hide the onscreen pitch fader and Pitch bend button on the performance skin. so all the BPM and Pitch Percentage and range values only appear in the Jogwheel??

You'll have to edit the Performance skin's xml to comment out those elements. If you are familiar with xml elements and attributes, it shouldn't be to hard to find what you want to remove and comment it out.
Yoy can switch the jog display to needle + text to show bpm info similar to the display in Serato/Rekordbox.
