When I put music on the tables it automatically adjust the BPM level to the level off the song on the other table. Is there a option or a manner to turn this off so it just keeps the BPM level of the song itself??

Go to the congfiguration settings for VDJ, and then the FAME pannel.
Turn "AUTO BPM" to smart, and auto pitch reset too if you like
